Tasting notes:
Smoked pork belly, allspice, nutmeg, mesquite ash, raspberry, Italian plum, and a hint of sweet-tart.
Production notes:
Hand harvested, fermented in 1 ton lots, pressed to settling tank, barreled, malolactic fermentation in the barrel and aged 15 months in a combination of 30% new and 70% neutral French oak. Unfiltered and unfined.
